Buying eggs at the hardware store

One of the first things I noticed when I arrived here was that eggs are not sold refrigerated. Unwashed eggs have a  naturally occurring outer coating that seals the egg from outside contamination. In the U.S. all commercial eggs are washed and then coated with a thin layer of oil to seal them and are sold by the dozen and found in the dairy isle of your super market.
The incongruity of a hardware store selling fresh eggs is just one of the delights of living in Costa Rica.
I do refrigerate eggs once I bring them home, and they are very good coming from a small farm with free range hens: cost about $2.50 for 15 eggs.
I will post a good egg recipe soon!
